Coconut Shrimp Curry

Try this new recipe for shrimp curry for all the seafood lovers out there! Pair this with some basmati or jasmine rice and a jessaddspice veggie side dish for a complete meal! Enjoy the recipe and share it with your family and friends!


Ingredients:

2 lb. raw shrimp, peeled and deveined

1 sprig curry leaves

1 green chili

1 onion, chopped

2-inch piece of ginger, chopped

4-6 cloves of garlic, minced

13 oz coconut milk

½ cup of crushed tomatoes

2 tomatoes, chopped

1 ½ Tbsp mild curry paste (i.e. Patak’s curry paste)

1 tsp fish masala powder (can be found in Indian grocery stores)

1 tsp salt to curry

½ tsp salt to season shrimp

½ tsp black pepper to season shrimp

½ tsp cumin powder

1 Tbsp coriander powder

1 tsp paprika

½ tsp garam masala

¼ tsp turmeric powder

1 tsp mustard seeds

1 tsp fennel seeds

Cilantro for garnish

Olive enough to coat the pot

 

Directions:

·       Preheat a heavy bottom pot such as a Dutch oven to medium/high heat.  Add olive oil enough to coat the bottom of the pot.

·       Add mustard seeds and fennel seeds to the sizzling oil and put the lid on the pot to avoid splattering as the mustard seeds pop.

·       Add onions, ginger, garlic, green chili, and curry leaves to the oil and sauté until the onions are translucent, about 2 minutes.

·       Add the spice mixture to medium/low heat and thoroughly combine with the onion mixture until the spices are incorporated. The raw smell of the spices should mellow out.

·       Add the chopped tomatoes, crushed tomatoes, and curry paste and combine uniformly. Raise the heat to medium. The tomatoes will break down and form the base.

·       Add the coconut milk, 1 tsp of salt, and mix. Add ½ tsp of salt and black pepper to season the shrimp.

·       When the curry is boiling, add shrimp in batches, gently nestling the shrimp into the curry.  Avoid splattering by doing this in batches.

·       Cook the shrimp for 10-12 minutes, stirring gently. Halfway through the cook time, check on the curry and gently stir. Add very little water if necessary. I didn’t add any extra water.

·       Garnish with chopped cilantro once cooking is complete.


Serve hot with Rice and a side dish and Enjoy every bite! :)
