Grilled Chicken Shawarma

Let's make an easy chicken shawarma dish! This dish is so versatile, enough to feed more than a family of four! Whether it be on the grill or in the oven, the flavors of the shawarma seasoning permeate the chicken, tenderizing it in the zesty yogurt marinade. Hope you'll try this at home version (not authentic), but still full of flavor and a good option instead of take out!

Ingredients:

·      20 pieces of Cleaned boneless skinless chicken thighs

·      1 Tbsp Ginger paste

·      1 Tbsp Garlic paste

·      1 Tbsp salt or salt to taste

·      1 tsp black pepper

·      1 tsp dried mint leaves

·      ½ cup shawarma seasoning*

·      1 cup plain full fat yogurt or Greek yogurt

·      ¼ cup Avocado oil

Directions:

·      In a large mixing bowl prepare the marinade:

o   mix ginger paste, garlic paste, salt, black pepper, mint leaves, shawarma seasoning, avocado oil, and yogurt thoroughly. Marinade should be a well-blended consistency.

·      Add cleaned chicken thighs to the marinade and coat each piece well.

·      Cover chicken in marinade in a sealed container for up to 24 hours in the refrigerator.  For the best results, marinate it overnight 8-12 hours or for up to a maximum of 24 hours.

Bake or Grill:

·      Bake chicken pieces at 400-425 degrees Fahrenheit, on a lined baking sheet for 30-40 minutes. Bake up to 1 hour in the oven on convection roast or bake, depending on the intensity of your oven. Monitor bake time and broil last 5-10 minutes of cook time on low heat until desired char is achieved.

OR

·      Grill on outdoor grill at 400 to 425 degrees Fahrenheit for 5-7 minutes per side depending on heat intensity of your grill. Monitor grill time, and flip and cook both sides. Do not leave grill unattended.

Enjoy with Rice, Pita wedges or Hummus!
