A healthy and delicious recipe of baked fish, without frying, using a Kerala spice blend.
Ingredients:
· 3 lb. Salmon, skinned and cut into medium sized filets
· 3-4 Tbsp Fish masala powder (Eastern, Periyar, or Nirapara Brands are good options at a local Indian grocery store or online)
· 2 Tbsp Garlic Paste
· 2 Tbsp Ginger Paste
· 1 Tbsp chopped cilantro
· 2 tsp salt or to taste
· 2 tsp ground black pepper or to taste
· ¼ cup of grapeseed oil
**Reduce masala powder quantity for milder spice level
Recipe:
· In a medium sized mixing bowl add Fish masala powder, garlic paste, ginger paste, chopped cilantro, salt, and pepper.
· Slowly add grape-seed oil to the mixing bowl and whisk the marinade together until all the ingredients are thoroughly combined.
· Add the marinade to the salmon pieces in a larger mixing bowl and thoroughly spread the marinade onto the salmon pieces until all the pieces are well coated with the marinade.
· Cover and refrigerate the marinaded salmon for a minimum of 2 hours so that all the flavors can marry.
· This recipe is baked in the oven at 425 degrees Fahrenheit for 20-25 minutes. When using the baking function on the oven, broil the salmon on low after the bake time for approximately 5 minutes or until desired crispiness.
· This recipe can be cooked on the convection roast feature of the oven at 400 degrees Fahrenheit for 20-25 minutes or until desired crispiness. Broil function will not be needed if using the convection roast feature.
· Serve hot, alongside rice, raita, and a vegetable side dish. Enjoy!
Tips:
· Occasionally peek, without opening the oven, to see that salmon is cooking for desired crispiness.
· Using grape-seed oil is helpful due to its high smoke point to prevent burning at high temperatures
· Salmon can be marinaded for up to 6 hours if time permits.
· Salmon is a sturdy fish that will hold up to the marinade and cooking time/temperature.
· If using other types of fish, spice amounts need to be significantly altered, especially if fish is less dense.
· Baking the salmon in this way is a healthier, flavorful option, while still enjoying the crispy, juicy texture of a fish fry Indian style.
