No Churn Gulab Jamun Ice Cream

Gulab Jamun is a tasty Indian dessert with the flavors of Rose water, cardamom, and pistachios as an optional garnish. This no churn ice cream highlights these flavors delicately. Amp up the rose water flavor or cardamom flavor in the recipe to individual taste preferences.





Ingredients:


• 4 sheets of Honey graham crackers

• 1 can (14 oz) of sweetened condensed milk

• 1 tsp vanilla extract

• 1 tsp cardamom powder

• 1 tsp rose water

• ¼ cup of coarsely ground pistachios (optional)

• 2 cups of heavy whipping cream


Recipe:


· Crush honey graham crackers in a ziplock bag or food processor to a coarse texture and set aside.


· Use a separate large mixing bowl for a stand mixer or one that can be used with an electric whisk to prepare the next steps.


· Add heavy cream to the mixing bowl and whisk to soft peaks by increasing the speed of the whisk gradually.


· Add sweetened condensed milk to the whipped cream and whisk again to stiff peaks by gradually increasing the speed of the whisk.


· Once stiff peaks have formed, add vanilla extract, rose water, and cardamom powder. Gently fold in the ingredients into the whipped cream mixture.


· Add half of the amount of coarsely ground pistachios to the whipped cream mixture and fold gently. Set aside the other half of the pistachios for garnish.


· Transfer the mixture into a freezer safe container, garnish with remaining pistachios, and freeze for at least 8 hours or overnight preferably.


· Enjoy this quick and easy Gulab jamun ice cream!


Tips:


· Tap the container on the counter gently before putting it in the freezer to even out the mixture in the container and expel air pockets in the mixture.


· For stronger Rose water or cardamom flavor add 2 tsp of each ingredient instead of 1 tsp.
