Stand Mixer Perfect Puri:
Makes 16-20 small/medium sized Puri's
Ingredients: 2 Cups Sharbati Atta whole wheat flour (I used Sujatha Gold brand) 1 1⁄2 Tbsp plain full fat yogurt 2 Tbsp olive oil 1 tsp salt 3⁄4 cup of water
1⁄4 tsp baking soda 1⁄4 tsp olive oil for coating dough 1⁄4 cup of Atta/wheat flour for dipping and rolling dough balls flat Enough canola oil in a wok to deep fry Puri's
Recipe:
Fit the stand mixer with the dough hook attachment and mixing bowl.
Add 2 cups of flour to the mixing bowl along with full fat yogurt.
Next, add 2 Tbsp olive oil, salt, and baking soda to the bowl and mix with a spoon prior to turning on the mixer.
Mix gently and allow the ingredients to be evenly dispersed in the bowl.
With the mixer on low speed, slowly add water and mix. Increase the speed to medium and allow the dough to form adding a little water at a time.
The dough forms when approximately 3⁄4 cup of water is added and mixed in a little at a time.
Increase the speed to high or back to medium to mix and knead the dough. Knead at medium speed for approximately 5 minutes. Puri dough is a stiff dough.
Once the dough is kneaded, form it into a ball without visible cracks on the surface.
Coat the dough with a 1⁄4 tsp of olive oil and place it back into the mixing bowl covered for 20 minutes.
Heat oil in a wok for deep frying on medium heat. This will take time, so move onto creating flat, small puri. Keep Canola oil on medium flame. Lower heat if you are not ready to fry yet.
After 20 minutes, make small golf ball size balls out of the dough. Use a little more atta to dip the dough ball into.
Flatten one dough ball and roll it out onto a lightly floured cutting board. Place rolled out puri onto a plate.
Once canola oil is heated and ready to deep fry on medium heat, place one puri at a time and push down on it with a spider strainer until it puffs up. Pour little splashes of oil on top of puffy puri and continue to fry. Flip it over onto the other side and fry until it’s golden brown in color.
Be careful when pouring oil onto puffed puri. Oil is hot. Drain puri onto a paper towel lined baking sheet.
Enjoy and Serve hot with chicken or beef curry or any vegetarian side dish!
