Quick Cook's Broccoli Slaw (Thoren)

Thoren is a vegetable side dish which is stir fried with a mixture of ingredients, specifically with coconut, and steamed to tenderness.







Ingredients:


1 10 oz package of pre-shredded Broccoli slaw

1 red or white onion, chopped

1 tsp of minced garlic

1 green chili pepper, chopped

1 sprig of curry leaves

¼ tsp of turmeric powder

1 tsp of coriander powder

½ to 1 tsp of salt per taste

1 tsp of fenugreek leaves or ¼ tsp fenugreek powder

¼ cup to ½ cup of grated coconut

1-2 Tb of oil (olive oil, coconut oil or combo)

½ tsp of mustard seeds

½ cup of water as needed


Directions:


· Heat a heavy bottom pot or nonstick pot with 1-2 tablespoons of oil of choice (olive oil or coconut oil).


· Add mustard seeds and allow them to pop with the lid on the pot.


· Add onions and green chili and sauté until lightly browned. Add garlic and curry leaves. Mix to combine for another 2 minutes.


· Lower the flame to low setting and add turmeric powder and coriander powder. Sauté the mixture until the raw spice smell dissipates. Add fenugreek leaves/powder and mix.


· Add package of Broccoli slaw and shut the lid of the pot for 1-2 min so the steam can slightly wilt the veggies.


· Lift the lid and then fold in the spices at the bottom with the veggies. Mix properly and increase the heat to medium.


· Add a little splash of the ½ cup water slowly into the mixture to prevent the veggies from sticking to the pot and stir. Add more water as needed, but it shouldn’t be soupy. Let the excess water cook off before adding another splash.


· Put the lid on the pot and cook the veggies through, for approximately 10-20 minutes for desired tenderness. In between cooking time stir occasionally.


· Add grated coconut and mix and cook for another 2-3 minutes and then turn off the heat, stir and then serve with rice or chapatis.
