Semolina for Breakfast?

Semolina or roasted rava is used to make Upumav sweet or savory. This South Indian dish is a very common breakfast item. It can be garnished with sliced bananas for that added element of sweetness or eaten with my egg roast recipe for a savory palate. As you add the bananas to the Upumav, crush them slightly into the Upumav or Semolina for a different, flavorful texture. Savory or sweet, this dish can be adjusted to either palate depending on what you pair with it. Compliment this breakfast with a cup of Masala Chaya and your breakfast is complete!


Ingredients:


1 cup of Roasted Semolina or Roasted Rava

1 tsp of Ghee

1 Tbsp Olive Oil

½ tsp Mustard Seeds

1 large Shallot, chopped

1 inch Ginger, finely chopped

1 sprig Curry Leaves

1 Green Chili, finely chopped

¼ cup Golden Raisins

¼ cup Cashews

Pinch of salt or salt to taste

Pinch of sugar or sugar to taste

Sliced Bananas for garnish

1-1 ¼ cup of Water



Recipe:


1. Heat ghee and olive oil in a wok over medium/high flame for 2 minutes.

2. Add mustard seeds to the wok and allow them to pop. Cover with a lid while mustard seeds pop to prevent splattering. Open the lid once the popping has ceased.

3. Adjust the flame to medium if needed and add shallots, ginger, green chili and curry leaves to the wok. Saute for 2-3 minutes until the shallots are translucent.

4. Add golden raisins, cashews, and a pinch of salt. Saute until the raisins are plump and cashews turn a golden brown color.

5. Add the semolina or roasted rava and mix it into the onion/raisin mixture.

6. Slowly add the water in tiny amounts` at a time. Stir the water into the rava and mix so the water will be absorbed by the rava. If there are dry spots, add a little more water. Adjust the heat appropriately so that the water is absorbed and the rava is light and fluffy. This comes together in 5-10 minutes. If you added too much water, heat the rava for a bit longer without burning it.

7. Optional: Flatten the rava in the wok into a thin layer to form some crispy bits on the wok.

8. Upumav is Ready! Serve with sliced bananas and a sprinkle of sugar on top of the Upumav. Enjoy!
