Tea For Two Masala Chaya (Spiced Tea)

What could be more comforting than a cup of tea to savor with scones or tea time snacks on a fall afternoon? Afternoon tea is a well known time of the day for one to chit-chat and enjoy tea with friends or family. This Masala Chaya (spiced tea) recipe highlights flavors of cardamom, ginger, cloves and more to provide the warmth that one craves during any season or time of the day.

Serves: 2
Ingredients:
• 2 black tea bags (i.e., Early grey)
• 1 cup or water mixed with 1 cup of whole milk OR 2 cups of 1% milk
• Sugar to taste (I used 1 tsp of cane sugar per 8 oz cup of tea)
• 1 cinnamon stick
• 2-3 cardamom pods cracked or ¼ tsp cardamom seeds
• 2-3 peppercorns slightly crushed or freshly ground black pepper via 2-3 turns of the peppermill
• 2 star anise
• 4 cloves
• 2 small pieces of crystallized ginger or fresh ginger (optional)

Recipe:
• Add milk to a small saucepan, along with sugar, cinnamon stick, cardamon, peppercorns, star anise, cloves, and ginger if using.
• Bring the milk to a boil at medium heat, stirring occasionally. Do not let the milk overflow once it comes to a boil.
• Turn the heat to medium-low and add tea bags to the milk.
• Allow the tea bags to steep in the milk for a couple of minutes. Stir well and squeeze excess tea out of tea bags.
• The tea and spices should have released its flavors and aromas into the milk.
• The longer the tea bag steeps in the milk, the bolder the flavor.
• Strain the Masala Chaya into 2 separate teacups through a sieve to catch the whole spices.
• Serve Masala Chaya with tea time snacks, biscuits, or scones. Enjoy!!
